This post is kind of funny because my family and friends know that I do not like baking or cooking. I do make exceptions for banana bread, brownies and cookies every once in awhile. (RARELY) Most of the time I leave the baking and cooking to my husband… thank goodness he can cook!! Well, I decided to give it a shot and bake these banana apple mini muffins! And guess what? They taste good!
These are super easy to make (that is why I like them) and are extremely delicious! I used this recipe from All Recipes as my inspiration and adjusted it for my own personal taste. I hope you enjoy them as much as my kids did!
BANANA APPLE MINI MUFFINS RECIPE
- 1 ½ cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon cinnamon
- ¼ cup applesauce
- 2 large bananas, mashed
- ¾ cup white sugar
- 1 egg
- 1/3 cup butter, melted
1. Preheat oven to 350 Degrees F.
Use paper liner for tins (butter or non stick spray will work too)
Sift together the flour, baking powder, baking soda, cinnamon and salt, and set
2. Combine bananas, sugar, applesauce, egg, and melted butter in bowl. Fold in flour mixture, and mix until smooth. Make sure not to over mix!! Scoop or spoon into muffin tins.
3. Bake in Preheated oven. Bake mini muffins for 10 to 15 minutes. Keep a close eye on them. Makes about 48 mini muffins.
